👌🏽pairing with pan seared scallops, green pea emulsion and crispy bacon. So much of that lift and tension that makes Dauvissat a big fave of mine. Maybe a little young but still outstanding.

Distinctive flinty bouquet. It reminded me of the cap guns we used to have as kids. Energetic and mineral driven with unmistakable white peach entry followed by green apple and stone fruit. Just always firing for me. I've never opened a compromised Dauvissat.

From the wine list at Mr Wong in Sydney. Popped and poured. Lt straw color with a gold tinge. Sea breeze, wet river stone, shucked oysters. Some slight hints of honey. Light on its feet at first but with air this has a sneaky richness that grows and grows. Would love to see what this is like in 5-10 years.

Popped and poured at Zuni's. Light gold. Heavy and viscous. Sweet fruit nose with notes of citrus, white stone, sea breeze, apricot, spice and a little honey. Rich in the mouth and after an hour of air the acidity came on strong. Long finish. Chewy. Great with oysters and the amazing chicken. On the upward slope still.
