Vincent Dauvissat
La Forest Chablis 1er Cru Chardonnay
Classicism in spades. Showing a perfect balance ripeness and and energy in 2020 with stunning concentration, layers of defined fruit and minerality and a chiseled core of racy acids. A fabulous rendition this year.

Jun 4th, 2023Nice young yellow canary color. Heavy in the glass. Tropical nose with notes of sea breeze, lemon, kiwi, white stones and tan spice. Glycerol and rich in the mouth. California like, but with nice Chablis nuances. I wonder how this will evolve over next 10 years. Maybe like 92’s?

Jan 24th, 2023Insane pairing with some fried pipefish. Salinity redefined, intensity elevated. The 19’ La Forest is frankly a little riper than expected, but it’s moments like this that takes the wine beyond its weaknesses and into the realm of perfection. I live for this!

Dec 7th, 2022Such heft and depth. Not an accompaniment. The whole show.

Nov 10th, 2022Light canary gold color. Youthful and bright in the glass. Great Chablis nose. Notes of apricot, honey, Kimmeridgian white clay, wet river stone, citrus and some tan spice. Gave it 4 hours of air in a decanter and every minute of it was needed for the wine to develop its sensory experience. Bottles in this condition should have at least 2 decades of enjoyment in front of them.

Nov 26th, 2021On a warm evening I was looking to serve something to start the night and this was a solid choice. Nice color with a fruit forward nose. This reminds me more of a really good CA Chardonnay than a 1er Cru bottle from Chablis, but I knew that going in. Lots of fruit, with light fine grained acidity. Went down quickly.
