Flight #3 of our 1997 Retrospective. Presented single-blind; no formal notes. Wine #3 was vinous and in great shape. The only wine in the group that showed stronger notes of coconut and vanilla than the others. Called Silver Oak. Drink now and through 2030.

Dark ruby in color with a wide reddish/brick rim.

Very complex nose with cedar, black fruits and vegetables.

Dry on the palate and fruit forward with great complexity.

Showing blackberries, black currants, plums, tobacco leaf, earth, dark coffee, chocolates, black pepper, black tea, bell pepper, Indian spices and vegetables.

Long finish with fine grained tannins and tangy cherries.

This 26 year old Cabernet Sauvignon is drinking very nicely now, although might be past its prime.

Feels like an aged Left Bank Bordeaux.

Loved the nose here, but needed an hour of airtime to open up. After 3 hours of airtime, more vegetable and earth notes show up.

Good by itself as a sipping wine or with food.

A blend of 93% Cabernet Sauvignon, 5% Cabernet Franc and 2% Petit Verdot.

13.9% alcohol by volume.

2002. In the same cellar spot since release. Youthful color, no bricking. The fruit might be fading a bit… but it’s silky smooth at 20 years old. Happy Thanksgiving!

Sipping Fine Wine

From a 5 Bordeaux grape blend: 81% Cabernet Sauvignon, 12.6% Merlot, 3.6% Cabernet Franc, 2.4% Petit Verdot & 0.4% Malbec, aged 24 months French oak, 84% new, Deep Ruby with aromas of ripe dark fruits, cedar and floral spice. On the palate flavors of blackberry, ripe cherry and currants with notes of mushroom, herbs, pepper spice and earthy notes. Fine big sweet soft tannins, long finish ending with cacao, smoky oak, fruit and mineral tang. Very nice, aging well, but time will reward!

Deep Ruby with aromas of black fruits, spice and hints of sweetness. On the palate flavors of blackberry, black cherry and currants with licorice, cacao, slight vanilla and savory herbs. Fine tannins, long finish ending with fruit, spice and savory mineral character. Nice!
