The 2021 Cabernet Sauvignon One Point Five is a very beautiful wine and also the first edition that marks the move towards a more serious Cabernet. Black cherry, plum, gravel, spice, leather and tobacco are nicely pushed forward. The 2021 shows the mid-weight style of the year nicely. The One Point Five is mostly estate fruit, with some outside vineyards, including sources that are now owned by Shafer. (Antonio Galloni, Vinous, December 2023)

Sipping Fine Wine

A blend of 83% Cabernet Sauvignon, 12% Merlot, 3% Malbec and 2% Petit Verdot, deep Ruby, slight purple edges, aromas of black and red fruits with some floral and herbaceous notes. On the palate flavors of this blackberry, currants and licorice with cacao, espresso, cedar and savory herbs. Long opulent finish, well balanced, full tight rich tannins ending with fruit, cedar and earthy character. Nice!

Cran-grape-blackberry sensibility with dark roast coffee undertones, milk chocolate, carnation, caramel, dried parsley, carrot purée. Palate is coffee coated black currant, chicory, dried blackberry, bramble, cedar, tight and green oak notes, violet, baseball glove, tart cherry, tart raspberry and raspberry reduction. Rich offering here to satisfy the lofty spirit, but needs time to coalesce.
Pair with warm fires.

Surprisingly rich and elegant, blueberry pie and fine espresso notes, chocolate truffles. I noted some grilled meat tones that made me think of Syrah. Very satisfying after a short decant from 375.

Small winery, managed by Doug Shafer. Blend of 90% Cab Sauv, 7% Merlot & 3% Malbec, aged, 20 months, 100% new French oak. Beautiful fruit & floral aromas, hints of savory spice. On the palate cherry & raspberry flavors with oak structure adding pepper, licorice & cacao. Firm tannins, approachable now, long ending with fruit & mineral edge. Had this about 2+ years ago, nice now but more cellaring will only benefit this beauty, if you can resist the temptation. Very Nice!

Delicious with a mid rare ribeye. Breathed in glass for 3 hours before the meal. Plush blue fruit and nicely integrated oak.

The color is very opaque. The leg drip is 9 seconds at 3/4 glass start to 1/4 glass. The boquet is blackberry pie. There is no tanic / alcohol aroma at all. The initial palate is that of blackberry, currant, cigars, and pepper. The finish is butter. No aftertaste. It is dry, but not over done! Perfection in a wine. Finally!!!!!!!!!!! worth every penny!
