On the nose, the wine is developing with bright green apple, star fruit, citrus tree blossom, lemon curd and minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose, the finish is long. This is a baby but there’s already a lot of material here. The texture is extraordinary. Expect a long life ahead. Very fresh, clean, the softest mousse on the planet. Beautiful citrus, most delicate of minerals, gentle spice, grand acidity, focused precision and balance for days. Excellent. Just overtly expensive.

When Salon has some age that’s when it shows how special it is. It gains most notably in texture, aromatic complexity and really becomes singular in its expression of Mesnil Chardonnay. 2007 is in a beautiful spot, stunningly pure with incredible fruit and mineral definition and a finish that just stays with you.
