Blend of 60% Xarel-lo, 20% Macabeo & 20% Parellada, pale lemon with aromas of stone and citrus fruits, tiny bubbles, good flow with light mousse. On the palate flavors of apple, peach, pear and citrus adding in some floral notes. Well balanced, medium length ending with yeasty character.

Dec 19th, 2021Like majority of Cava, this lacks the finesse and complexity of a good Champagne. But it does provide sheer pleasure with nice mix of apple, peach, bruised pear, light toasted nut and hint of flint. Only 4g/l of sugar, this is really a extra brut. Very sharp and vibrant on the palate. With 72 month aged in bottle, the price is just silly.

It’s a bit too heavy to serve alongside starters, however, I’d use this bottle as a segway into a nice sav Blanc if you’re having drinks and food with friends.
