This grower’s NV always seems to charm me every time I get the opportunity to drink it. The color is almost a touch brassy. Beautiful, tiny bubbles. The nose is remarkably red fruited with strawberries and brioche on full display. It’s almost like a strawberry shortcake, no cap. On the palate, strawberries, raspberries, lemon zest, minerals. It’s rich, but so impeccably balanced. Absolutely, positively crushable. The dosage is perfect. I haven’t deciphered them code Dethune uses on the bottle to understand then disgorgement date...but I believe was recent.

I’ve said it before and I’ll say it again, Champagne may be the best wine pairing with the traditional Thanksgiving meal and this NV from Paul Dethune was sublime. Pulled from the fridge and opened about 30min prior. Straw colored with an impressive mousse. About as affable as they come with a bouquet of white peaches, magnolia blooms and a whiff of brioche. On the palate it was stone fruits, citrus and minerals. Every bite of the meal begged for another sip and every sip begged for another bite. What a delight.
