A vibrant, mineral-driven white that truly channels the volcanic soul of Santorini. Made from 100% Assyrtiko, this wine delivers all the tension, brightness, and texture that have made the island legendary among white wine lovers.

On the nose:
Lively citrus , lemon, lime, grapefruit wrapped around subtle notes of dried apple, pear, quince, and a delicate floral lift.

On the palate:
Crisp acidity and focused structure define the experience. The mid-palate is clean and direct, leading to a short yet precise finish, marked by an unmistakable saline edge and crushed stone minerality that echoes wet pebbles, oyster shells, and volcanic ash.

Mouthfeel:
Medium-plus dry, with a medium to full body and a lingering impression of sea breeze and stone.

A truly refreshing summer white that punches well above its price point. Perfect with oysters, shellfish, grilled octopus, or simply on its own with a sea view (or dreaming of one).
