Toasty bubbly acid burst on the tongue. Sur lies elements showing. Refreshing but tight on the finish. Too much acid bubble austerity for my palate but others may appreciate this element.

Delicate aromas of apple and bread dough, with hints of ginger and white pepper. Bright and fresh on the palate, with citrus and green apple flavors, great acidity and a minerally finish. A real treat!

Persistent mousse. Nose of bruised apples, peach and some other stone fruits. Not enough acidity to reach a perfect balance.

One of the most famous Cava. Grower crafted Spanish bubbly. Family owned. Single vineyard. Biodynamic cultivation. 7 years aged on lees. Brut Nature with zero dosage. Blend 75/25: Xarel.lo/Macabeu.

It has everything that you can think of to please wine enthusiasts, but imho it is still light years away from Champagne. Good on its own, but I choose Champ.
