What a killer Vaillons. This is insane. Perfumed nose of classic oyster shell, some nice green apple fruit and Meyer lemon. Smokey, saline, refined and even some apple butter. Great aromas. So refined and clean. Almost feels like there is so much more. Palate is so epic and deep with grace, depth and refinement. Juicy and serene with a sweetness the oyster juice quality. More west coast than east coast. So pure, resonant and long. What a great vintage 2014 is.

This was much better than the last time I had this bottle. So many times Chablis can be linear, acid, and mineral. This is one that has that but is more structured with a nice balance of fruit. This has started opening up nicely.

This was very open and Vaillons opens earlier than his Cote de Lechet. Nose of crisp apple skins, seashells by the seashore and light pear. Palate is rich and brisk with terrific mineral complexity and dare I say mineral sweetness. Dazzling showing.

Clear, pale straw, no staining, medium viscosity. Sweet honey, minerality, and grass on the nose. Palate has limestone, Meyer lemon, toasted honey, sour apple, and maybe a little oak? Medium body, medium+acid, medium alcohol, long finish. Really enjoyed this Chablis.

2014 Vintage. 13% Alcohol. Lovely acidity still going strong to carry the lemon, minerality and other citrus elements. Another #garagiste wine that delivers.

Smacks you right in the face with a lot of acid. Pears, brine, chalk in the palette. Great wine, still tastes young and with all that acid I think will improve and complexify with age. Delightful now, wait a couple of years if you can!
