Buttery and delicious. More savory, salty and dairy-inflected than the fruity, confectionary 2005 “Vaillons.” Oak no doubt, but well integrated. This should be consumed now; doesn’t have the same 5-10 years left. Still, wonderful.

Have always adored these wines. Traditional, full of soul and character. Would never call this 15 years old, fresh as a daisy. Ripe citrus, grilled pineapple, golden apple, iodine, anchovy, damp earth, mushroom, spring honey, tarte tartin, herbs. The warmth of the year is present in its upfront fruit, but it all departs salty mineral with persistent cut.

The 2005 Les Lys, after +/-10 years in Defaix’s cellar and another 10 or so since release has a nose of apricot and straw and is bone dry on the palate with touches of pear, vanilla and honey. Its golden, lager-like color belies its age and perhaps the slightest touch of oxidation.
