Vintage 2016 | drank this a year ago and my opinion is the same: great balance because the wine has só much acidity that it gives counterplay to the sweet. Without food it is a wine with a lot of tension. With a home made brownie it became more rounded. Still potential for many many years. A treat.

Oh my that is delicious. I could spend hours with a glass of this. Honeyed, caramel, apricots, but such gorgeous acidity and salinity keeps all that RS in check.

During harvest, it can take up to 30 passages in the vineyards to pick these at the perfect time, as Château Pajzos only selects fully botrytized -not just passerillé- grapes. So when you think of noble rot wines, this is what you want. And man… 2006 delivered!!! This beautiful bottle is just a complex beast of honey, ginger, candied apricot, and caramel. Soft and light yet sexy and punchy. Man, this is nectar for the gods.
