Feb 8th, 2024Vintage 2003 - Chasse Spleen from this hot year has developed in to a ‘Grand Seigneur’. A Noble wine with a classic complex smell: dark fruits, plums, a hint of ‘poop’ stable, cedar. Beautiful developed taste (à Point) with chocolate, good acidity. Besides this the wine still has a certain austerity, which I like. #chassespleen #moulis #bordeaux

Apr 2nd, 2018Steak & claret on a Tuesday! Prime dry aged ribeye from Dittmers makes any day an occasion. This shows how good 2003 can be in Bordeaux- it is big and curranty but still has a long, well focused finish that cuts the richness of the beef. Chasse-Spleen is THE insiders claret!

This ripe, cassis powered Moulis seems to share the trajectory of an 1982 Bordeaux, and I should try and leave the little I have left for the future!

Jul 18th, 2015Friday night steak & claret is back! Draegers was running a special on aged, prime top sirloin and the meat was very tasty. This bottle was more elegant, drier and finer than the last one from this half case auction lot. Bordeaux continues to surprise me with the quality of this otherwise scorched vintage!

May 2nd, 2015A very successful 2003! This bottle was extraordinarily bold and rich, with gigantic currant flavors and aromas. Yet, the back end was still refreshing and gravelly, making it a fine partner to the bone-in Piemontese ribeye that chef Marco prepared. I am so happy to live so close to the Four Seasons and Quattro... Friday night uncorked is the best!
