California Chablis, drinks like a 1er cru easily. Still it’s its own thing and very distinctive. Terrific freshness, aromas starting to develop. Mineral, seashell, lemon squeeze. Beautiful work.

Nov 21st, 2022Nose of lighter citrus (not sharply acidic) very modest floral, blanched almonds or bananas? Taste brings much more acidity, nice backbone and stone/limestone (?), slight key lime and floral with a touchy of creamy vanilla. As it opens up and warms up, something doesn’t quite hold together. It’s like the glue holding it together starts to break.
