Bright straw gold. Wildly aromatic yielding ripe pear, citrus, and white flowers on the nose. Medium palate is at once bright and rich, stony and honeyed. Firm (medium plus) acidity. Moderately short finish. The dried “passito” method grapes turn this wine of a normally simple appellation into a complex, “thinking man’s wine.” A wonderful pair with rich seafood and poultry dishes or soft to medium cheeses, yet still satisfying as a warm weather sipper. Acidity says drink now through 2022 if stored well.

Ripe golden pear and baked unsalted almonds, tree fruit, lemon meringue, starbright, straw yellow in color, and a medium bodied, minerally, creamy mouth feel. This Soave has some acidity in its back pocket so definitely would pair well with seabass or sea scallops. Seams as though there is a slight oxidized feel to it, maybe due to air-drying the grapes before their pressed, similar to the process in making Amarone, resulting in its dried fruit profile, like dried figs and so on. I did enjoy it by itself though, quite a refreshing bottle, if I might say so myself!
