Amontillado characteristics:
Aged first under flor as a fino or manzanilla, then fortified to 17% to kill off the yeast and allow oxidation. Balances tension of lean texture with oxidation's complex, heady aromas.

What makes it special?
A model bodega focusing on small production, high-quality wines dedicated to tradition, this wine is first aged for 8 years under flor, then another 12 in the solera system. It is not for slugging back - this is an intense, intellectual, wine-geek's wine.

God only knows how old this mini bottle was? It was so smooth and delicious. I honestly believe that now is a wonderful time to invest in Jerez wines. They age forever and I believe they will get more and more expensive as their market decreases each year.
