Oloroso VORS characteristics:
Meaning "fragrant," designated for rarity and age. Extended oxidation, smoke & whiskey aromatics, completely dry, rich texture & spiritous intensity.
What makes it special?
Founded in 1998, Bodegas Tradición focuses exclusive on old and rare sherries. This oloroso average 45-50 years old. Fully oxidized and with high-alcohol, it sips like a fine whiskey and will similarly keep. Pairs amazingly with soft, mild cheeses (killer with Camembert).

Amontillado characteristics:
Aged first under flor as a fino or manzanilla, then fortified to 17% to kill off the yeast and allow oxidation. Balances tension of lean texture with oxidation's complex, heady aromas.
What makes it special?
A model bodega focusing on small production, high-quality wines dedicated to tradition, this wine is first aged for 8 years under flor, then another 12 in the solera system. It is not for slugging back - this is an intense, intellectual, wine-geek's wine.

Fino En Rama characteristics:
Meaning "raw," it is minimally filtered, heightened floral and yeast aromatics, richer & more dense than fino.
What makes it special?
Founded in the early 1900s, Colosia is one of only 5 remaining bodegas in El Puerto de Santa Maria, the historic home of Fino. With a cooler climate and robust flor, it is an elegant, serious wine that looks, tastes and feels golden.

What makes it special?
A young renegade project, Equipo Navazos is not a traditional bodega but instead collaborates with a number of top producers. The 'Bota' series are extremely limited sherries each from a single solera or cask.

Delectable Featured Wine
*375ml bottle*
Fino characteristics:
Bone dry, lean & crisp, has no oxidation, aromas of dough & salt
What makes it special?
Perhaps the world’s finest Fino, Incoente is treated minimally but with lots of care; it is sourced from a single vineyard (unlike the convention of buying from a co-op), fermented in barrel and aged for 10 years under flor (the protective layer of yeast that protects from oxidation while allowing the wine to age).
