Excited to try this new one from Justin Willet and Etienne de Montille. Mildly reduced nose with hints of straw, fresh apple and oak. Mineral and lemon drive the palate, with orchard fruits. Ginger, tart pineapple, and cinnamon too. Somewhat racy. A little one dimensional but that’s nit picking. Reminds me of good Cote Chalonnaise. — 4 years ago
Cask strength - a bit much for me - but an impressive Rye, especially as it tastes much more aged than its two years. Willet is a distillery on the rise, so looking forward to tasting others whiskeys from them in time. — 7 years ago

Warm vanilla and sherry trifle notes bordering on sponge cake with candied orange peel and cloves, as well as caramel apple, baked pear, baklava and bahri dates in this nose-feast. Hot entry with heavy oak that bites like a thorny rose stem, burnt brittle, toasted black sesame, leather whips, black pepper, vanilla bean, cedar, spicy tobacco with a squirt of grape seed extract, lingers on an wooden point that suggests cypress, but my mind returns to lac and wood stain, if they were edibles. The Rye Project is Wolves’ first product offered into traditional distribution. Volume One is in collaboration with Willet Family Estate. The Rye Project is anchored by a very low-content rye whiskey distilled in Indiana and aged for 6 years in new American oak. No barrel finishes, no gimmicks. Wolves aims to deliver straightforward and balanced expressions of the best Rye in the world, in a low-rye format.
Upon Acquisition, the barrels were sent to Sonoma County for further aging. Then, Wolves and Willet Master Distiller, Drew Kulsveen, selected barrels of 7 and 6 year straight Rye whiskey from the Willet Family Estate reserve.
The custom cork top was inspired by the knob of a baseball that is a family heirloom of Jon Buscemi, while the label was created in partnership with a bespoke wine label maker in Sonoma County.” — 2 years ago
