Rare Barrel. Blurred T. Saison aged in oak with Tempranillo grapes. Fascinating blend of wine and beer. It smells of tart cherries and blackberries. It really reminds me of a cider. Mouth is tons of fruit, alcohol, funky finish with citrus acidity and dark cherries. I’m fascinated to see this one age. — a month ago

Kentucky Straight Bourbon Whiskey

Color of concentrated black tea. Nose is high quality bourbon with sweet apple, mesmerizing aldehyde, paint, powerful alcohol and spice in nasal cavity. Taste is extremely smooth, with toffee like sweetness wrapping the tongue, zest, sweet apple, and a bit salty mineral. Aftertaste has even more toffee sweetness, a bit heat. Simply an amazing closer to the evening with very good friends. Thank you Christina for opening. This is really delicious now but, will continue to improve over the next 20 years.

The nose reveals; yellow florals & lilies, sea spray, sea fossils, some of the most amazing chalkiness you can experience, lemon, lime zest, pineapple juice, green melons, grapefruit with pith, vanilla notes, orange blossoms, touch of of apple cider, woody notes, brioche with spring florals with greens.

The body is delicate, rich, yet restrained. Micro oxygenation, beautiful mousse, sea spray, sea fossils, some of the most amazing soft chalkiness you can experience, lemon, lime zest, pineapple juice, green melons, passion fruit, grapefruit with pith, vanilla notes, lanolin, orange blossoms, touch of of apple cider, woody notes, brioch, elegant beauty, richness, excellent acidity, balance, length and polish for days.

Good, but not as good as the Speciation. Kinda strikes me as simialr to Jolly Pumpkin’s La Roja, but with nowhere near the same depth. Still a good, mild sour. — 19 days ago
