There is some conjecture as to whether Talisker is classified as Island or Islay but suffice to say it is the only Distillery on the Isle of Skye. Had a tour of Talisker many years ago after going to the HQ of the MacDonald Clan on Skye. What a powerhouse whiskey! Smoke and citrus hit you like a core sample that somehow burgeons into thick smoke with a saline and jalapeño essence unraveling it’s lemon, tangerine and orchard fruits wrapped in sweet tobaccos. There is a mild sweetness that tames the heat with vanilla, chili pepper, almond biscuit and brown sugar, but the core never wavers, and the smoke never clears. From 80 year old Blaufrankisch vines in Austria. By the glass. Dusty red fruit aromas with touches of barnyard and pepper. Just medium bodied with with spicy red fruit on the palate and medium minus dry Tannins. A glass went well with Confit of Duck at Spring Restaurant in London where the chef is Australia’s Skye Gyngell.
