Dinner Chez Nous is hard to beat (in my humble opinion 😂😂).
Tonight we’re going with a classic: filet mignon and Cabernet Sauvignon. It’s no wonder this pair works so well.
The wine is dry and offers velveteen tannins, high alcohol, medium acidity, and concentrated black fruit to counterbalance.
This wine is deep ruby and offers blackberry, black cherry, plum, also violet, black olive, cedar, vanilla, nutmeg, clove, and tobacco notes.

What an excellent drink. Light in color, but big in every other way! The mushroom and Earthy flavors play so well with the fruit here. Tight upon opening, but well structured it was a great pairing with a filet mignon. This is the best wine I’ve had this year! First off, acidity is bonkers. Not for a group of non champagne drinkers. Sitting in the backyard with apple trees in bloom and jasmine blooming this is amazing. Smells of apples, pear, grapes, peach, but also blossoms. Palate is bigger and fruitier than I’d expect but citrus acidity dominates finish.
