This 2016 blanc de noirs sparkler — made with Pinot Noir hailing from the Bien Nacido Vineyard — is medium gold in appearance, with a fine and creamy mousse, and fresh notes of just-ripe yellow apple, pear, white peach, lemon zest, citrus blossom, biscuit, toast, brioche, toasted almond, and marzipan. It has a lingering, elegant finish.

Color is tawny red with some signs of bricking. A savory rich nose: initial cherry and subtle Cayuse funk with some bacon, gravely rock, and floating notes of sweet florals. The taste just jumps from the glass - a soft juicy mixture of black cherry-plum fruit, stewed meat and minerals, tobacco and a raspberry pencil lead medium plus finish. Tannins smooth, but could still use some aging. The Flying Pig is a first and lives up to the Cayuse brand. A lucky find! — 4 years ago
