Three weeks later and I’m craving another taste of this... See my previous notes but this time: moderately extracted ruby red. Some black currant in nose initially. Strawberry and raspberry jam flavors, some seed bitterness and tannin chewiness, otherwise well balanced. Slightly oily, cherry and citrus peel aftertaste emerges after 30 minutes, black pepper on nose and in aftertaste after 45. Light to moderate skin astringency after an hour — 25 days ago

Estate Grown Paso Robles Cabernet Sauvignon 2015

I like their big tannic Reserve reds to lay down for five years plus. But what about their regular reds? Heavily pigmented purple-red in color. Briar, leather, cherry notes in nose. Touch of barnyard, mint-eucalyptus in nose as well. Black currant and cherry flavors, mild tannins initially, dry finish on palate. Plum flavor emerges with time. Skin astringency moderate; sharp chewy tannins emerge after 30 minutes, but soften two hours later. Red fruit finish and aftertaste. Well made for a basic-entry Cabernet; certainly there are more complex and costly Central Coast Cabernets but this is a solid choice in the mid price points. Reserve Dorsa 2015

A.k.a Cabernet Dorsa varietal, German cross between Dornfelder and Cabernet Sauvignon. In commercial production in Germany since 2003. Dense inky purple red, highly extracted pigment. Leather, black currant, white pepper and slight funk note in nose initially. Red fruit and mint flavors, tart, fine grain seed tannins with white pepper, mint flavors on finish. Varietal associated with flavors of cherry (present) and bell pepper (arguably present). My first encounter with the varietal. — a month ago

Merlot 2015

Dense purple, highly extracted pigment. Cherry, mixed berry and sage notes in nose on initial pour. Blueberry, cherry flavors, light fine-grained skin astringency in finish, nice length of fruit. Interesting tannin structure, heavy in skin contact, light on seeds. Tannins build in intensity with time, aeration. The Castoro style for reds is tannin-heavy, not to everybody’s taste, but I’ve always admired their commitment to a style that’s gone somewhat out of fashion elsewhere. To my thinking, it enhances even the much maligned Merlot varietal (Sideways, anyone?) No one wants to age wines like this anymore, it seems. I wonder if wines like this even need further aging. Decant, aerate, enjoy, tannins and all... Three hours should do it. — 2 months ago
