Dark ruby in color with a very wide reddish rim.
Pretty nose with chocolates, cedar and vanilla.
Dry on the palate with nice complexity and mouthfeel.
Showing blackberries, black currants, plums, cooked cherries, spices, cedar, licorice, cola, chocolates, vanilla, coffee, peppercorn, light earth, herbs and tobacco.
Long spicy finish with fine grained tannins, herbs and cherries.
This 9-year-old Cabernet Sauvignon from Paso Robles is drinking beautifully now. Spicy, rich and really shows itself right out of the bottle.
Feels Like an elegant Napa Cabernet Sauvignon.
Peaking now, and will continue to drink nicely in the next few years.
I had it 3 years ago, and this time it is drinking much better.
A great sipping wine, but good with food too.
100% Cabernet Sauvignon grapes were aged in (50% new) French oak barrels for 24 months.

A single vineyard or “ Pago “ 9K from the Atlantic, In Sanlucar de Barrameda. Andalucia, Spain. Palomino Fino grown there since the 1800’s at least.
4 years under flor.
N: Very oxidative w the sea, vanilla in the background.
P: The creamiest semi salty 15° dream of the sea.,so easy going down, all the rough edges worn off. Slight kick of wood and vanilla. But old, not a kick in the face.
At15°, a wee bit dangerous in it’s innocence.
Come back after a day in the fridge, it’s got a heady/heavy marzipan nose that hits your palate bone dry. A wonderful juxtaposition of worlds. Still has that briny finish so nice in Manzanilla and long.

Spicy and savory Zinfandel from El Pomar Sub-AVA in Paso Robles, California. Intense berry mix on both olfactory and taste, baked cherry, highly concentrated red fruits. Impactful mouthfeel, persistent and long finish. It screams BBQ ribs for pairing! — a year ago

N:Peaches! yeasty bread, Oranges, a whiff of the sea.
P: So smooth, Oranges and almonds. Caramel. Great acid balance. Nice chalk underlying it.

1978 Chuck Hope left his job in beverage distribution, moved to Paso Robles, became a farmer, & with time became a top grape grower. Working with his father, Austin led the family into winemaking in ‘95, creating his label in 2000. Grapes from small blocks in AVAs of Paso Robles: Creston, Estrella, Adelaida, El Pomar & Willow Creek, aged in 75% new French oak, 18 mos. Dark Ruby, aromas of sweet ripe black fruits & dried smoky spices. Flavors of ripe blackberry, sweet cacao, espresso & vanilla oak. Big wine, fine tannins that needed 45 minutes, lingering fruit finish. The 15% ABV was not an issue. — 7 years ago

Made from Pedro Ximinez, in solera for 5 years. Vineyard farmed since 19th C.
Limestone and sand.
You can sense the “ heavinesses “ of the Pedro Ximiniez on the nose, but it’s an almond fest, dry, w a touch of barrel and raisin to finish. Brandy like.
Not heavy on the palate.
