Caramel nose. Sweet and slightly dry at the same time with a lot of carbonation. Fantastic storage box and great for any 007 fan — 2 months ago
Paul Hobbs two nights in a row! Gold color. Very deep, thick wine with subtle acidity. Aged pineapple with stone fruits and subtle apricot, peach, and melon elements. Fairly unique and complex in my mind. I prefer other single vineyard Paul Hobbs Chards style wise but wasn’t bad by any means. 93.5 rounding up. — 12 days ago

Medium Ruby color with aromas dark red fruits, black tea and ample floral spice, aged in 8% new French oak for 21 months. On the palate flavors of black cherry, blackberry and plum with tobacco, cedar, black pepper, tea and vanilla spice. Soft fine tannins, long finish, well balanced with acidity, ending with fruit, herb, spice and flinty wet stone mineral character. Nice! Organic! — 16 days ago

I waited as long as I could to finally try but gave in. 66 Grenache Blanc/28 roussanne/6 Chenin Blanc. Inaugural vintage for the Saxum white.
As a fan of white Rhône style wines, I expected the youth to show in an overly savory/waxy way, but I was pleasantly surprised how open this was. Pop and pour. Medium gold in the glass. Classical roussanne notes of orange marmalade and apricot, alongside salted almonds and yellow fruits. Gorgeously opulent on the palate but the Chenin gives it a spine of acidity to keep it dancing. Honey-roasted cashews, honeycomb, lemon cream, underripe pineapple and a little beeswax.
This seems fairly open for business, so no regrets on opening. Little bit of air and it’s ready to rock. — 8 days ago
