Popped and poured; no formal notes. A very pretty straw color with a persistent mousse. Lemon meringue, raspberries, almond croissant, and pink flowers. Powerful. The finish is rich and long. Savart’s most limited production Champagne made from 100% old vine Pinot Noir with a mere ~400 bottles produced. Visually, I continue to double take at this wine as it barely appears Rosé. It’s intensely perfumed, floral and deeply aromatic, with a precise, taut and linear palate that screams purity and and elegance. A very singular, vinous and most importantly delicious Rosé Champagne that there will never be enough of! ☺️ — 15 days ago

Another rendition of one of my favorite wines, a most sensual and erotic wine. An alluring deep salmon rose color in the glass with nice effervescence of small bubbles. The nose immediately shows as sweet, sweeter than I would expect but that soon dissipates. Strawberries up front with red cherries and a touch of apple. Crushed herbs and mild spice after some time. There’s a floral aspect here that’s outstanding, as well.
So many rosé champagnes are so similar in ambition and execution that it’s nice to find something that’s a marked step above. 90/10 Pinot Noir/Chardonnay and disgorged in October of 2019 with a dosage of 9 g/l. Nervy and thrilling, it’s an exciting champagne that doesn’t skimp on power. Good balance and structure with a vinous nature. Playful and teasing, without a trace of austerity.
Pure sex in the mouth with candied raspberries and more wild strawberries. Blood orange, grapefruit, and passion for days. Peaches, melons, and romance. A little chalk, a little lust. One of my favorites, year in year out. — 7 days ago
