You didn’t think this wasn’t making an encore appearance after last weekend did you?

This n/v oxidative leaning styled Champange speaks better to the pairing than the more reductive styled Launois Champagne last weekend. Not that the reductive wasn’t really good. It’s a yin & yang thing that makes this Champagne pairing more suitable.

What a dessert pair!!! Waited too long to make happen. Make sure you do it during high apple season.

Intermixed sips of 2015 White Burgundy doesn’t hurt either.

Médoc Red Bordeaux Blend 2016

Color of dark purple, a bit cloudy. Nose of cocoa, black cherry, tobacco leaves, aldehyde, savory spices, oak, and plum. Nose is decent, with a slight too much of alcohol strength. Taste of good acidity, solid tannins, a bit peppery, black cherry, vanilla, slightly sweet, chocolate, oak, and quite dense and chewy. Rodolphe Péters took over the reins of this venerable estate in the southern Côte des Blancs in 2008, becoming the 4th generation to lead since the estate was founded in 1919, under the name Camille Péters. 100% Chardonnay, Crisp, fine mousse with steady flow of bubbles. Citrus, and biscuit aromas. Fresh fruit flavors of peach, apples and lemons, smooth and dry. Long mineral finish ending with elegance. Nice! Consistent quality! — 20 days ago

Love every vintage of Gonon- the best St. Joseph IMO. So expressive and giving seemingly at any age, as it was here with 2016. My second 2016 in the last few months. Signature inky purple. Deep and intense with great texture showing black fruits, liquid minerals, newly bloomed violets, black olive and hints of cacao. Wonderful concentration, energy and finesse.
