I could drink this for the rest of my life. Juicy but not childish, flavors are very fruit forward but really pack that barnyard feeling as well. — 5 days ago
Much different than the Gaston Chiquet we had just before. This was made in a more oxidative style. Lemons and nuts but the acid kick at the end is delightful and I think the dosage brings things into balance. To me, not quite as racy and exciting as the Blanc de Blancs d’Äy but this is a wine of good character. — 2 months ago
Wow. A great example of what it is.
Nose is mountain flowers with a kiss of mountain flower honey. The honey is not really perceptible. It adds depth. So fresh. As this opens the floral ty is just gorgeous.
Palate is gorgeous. Perfect balance. Fruit is like liquid flowers almost. Fruity but I can’t place the fruit. Quince? Like really well made 1e cru Chablis but mountainy. Very delicious but so pure. Julie Andrews in sound of music. A hint of minerality.
If this had more palate complexity it would rush into the elite category. For a “simple wine” this is as good as it gets.
Amazing change of pace wine.

Tart in a way that reminds me of Lithuanian cranberry soup they serve in the Baltics for Christmas Eve Dinner. — a month ago

From magnum. Light mouthfeel, great poise, fat/saturated flavors. Very pretty. — 12 days ago

Extended skin contact white wine from the nuns, advised by Paolo Beal. Looks like cognac in the glass. Tastes like dried apricot, rosemary, it is tannic and structured. Unique and delicious. — 2 months ago
