Castoro Cellars

Reserve Paso Robles Petit Verdot 2015

Dense purple-red, high pigment extraction. Black currant and briar notes in nose. Blueberry, raspberry, cherry and violet flavors, good acidity but tannin bomb on initial pour. Rounded mouthfeel after decanting an hour, black pepper flavor and moderate skin astringency remain. Barrel smoke emerges after two hours. — 3 years ago

Reserve Whale Rock Vineyard Cabernet Sauvignon 2014

Inky purple-red, highly extracted pigment. Cherry, mint, canned vegetable and funk notes in nose. Cherry, raspberry and barrel char flavors, lots of fine-grained tannin in suspension on initial pour. Moderate skin astringency. Still assessing This is a tannic monster; retasting every 15 minutes, the bitterness and astringency keep intensifying. — 3 years ago

Pasofusion Red Blend 2015

Blend of Zinfandel and Petite Sirah. Dense purple red, highly extracted pigment. Blueberry, raspberry, mint, butter and barrel aromas, flavors. Fruity, not quite jammy, definitely not overripe, high skin tannin astringency on initial pour. A tad light on acid. Cherry emerges after 30 minutes, some seed bitterness after 60 minutes. Astringency largely resolved after 60. Mint changes to menthol after two hours. Decant two hours minimum. — 3 years ago

Reserve Dorsa 2015

A.k.a Cabernet Dorsa varietal, German cross between Dornfelder and Cabernet Sauvignon. In commercial production in Germany since 2003. Dense inky purple red, highly extracted pigment. Leather, black currant, white pepper and slight funk note in nose initially. Red fruit and mint flavors, tart, fine grain seed tannins with white pepper, mint flavors on finish. Varietal associated with flavors of cherry (present) and bell pepper (arguably present). My first encounter with the varietal. — 3 years ago
