The Chook Winery
The Chook Sparkling Shiraz
South Australia, AustraliaIve had this before but not a big fan after two different vintages. I don't know this last bottles vintage, but it has a fishy nose. I'll let it warm up and see what happens. There are much better sparkling Shiraz but hard to find.

Deep dark and dense. Bubbles disappear almost right away. Nose is complex and slightly off-dry, showing violet candy and blueberry compote; quite exotic. Incredible passage that explodes on the third quarter. Pommegranate and dark cocoa, expresso, and fine tobacco. Really fun complexity and depth of flavors. Very tasty and intriging finish. This wine pairs very well with all types of chocolates. 89 pts.

Really interesting...fun. A tidal wave of crushed brambles if little else. Thanks Ethan!

Lovely, off dry, full body, with notes of blueberry. Paired well with shrimp cocktail.
