Straw and hay, some white pear. Most interestingly, it has this brine-like component, like the liquid left over in a clamshell.

Floral, saline, and yeasty. Gorgeous expression.

Flowers and apricots on the nose - poached fruits, honey & touch of minerality on the palate - surprisingly well-matched with a rare steak!

A great example of the wine. Underripe peach, stone fruit, apricot. Citrus and chalky on the palate.

One of the more austere VSG we’ve had: pale straw and muted orchard fruit on nose, but really chalky w/minerals, salty saline & marine aromas. On the palate it was angular, rigid acidity some citrus but more secondary flavors from nose. Needs proper food pairing
