2010, low dosage, disgorged 2016. The nose offered more leesy toast than the crisp apple palate. Unexpected at this age and style, pretty with it but slightly shy.

2013 base wine, April 2018 disgorgement. Right now for me Pierre Paillard is making some of the best extra brut Champagne out there. Great wine, great value.

Very dry and almost austere. Ferrous note mix with redcurrant, cherry, charcoal and orange rind. Remarkably complex for such a compact and linear wine.

Delightful bright acidity, a touch of minerality and great complexity. Hazelnuts, bitter cocoa and baking spice. Under ripe pear adds to the acidity. Green fruit peels, add an almost perfume note. Long dry finish. Pair with a squash soup (no cream!) truffle oil, and a pecorino crisp
