Nose is so high pitched and sappy, wonderful freshness. lime zest, vanilla extract and spices, Really unique, citrus and you can smell the acid, hickory, iodine, airy and like the ocean, seamless and pure and such a fine mousse, amazing finish. amazing density and concentration without being overblown. elegant richness and so clean.

Aug 23rd, 2021On opening, aromatic & austere, searing with enamel-dissolving acidity. Blossomed over two hours and held its own against everything we threw at it. Oursinade was an inspired pairing, quince/apple/smoked duck breast salad another. Vinous and fascinating.

Nose is dense yeasty brioche. So rich. Savory. A pleasant hint of oxidation.
Has that rich champagne brioche goodness. Savory. So good. Nice balance

The brilliant Les Goulats is my beverage of choice to celebrate my Dad’s 84th via Zoom in a few minutes. The heirloom varietal cuvee as I call in. Some Arbanne. Some Petit Meslier and some Fromentau on a bed of 33% Chardonnay. Toasty and yeasty aromas. Citrus rind. Hint of feral. Lemon, so mineral, so earthy and so unique. Floral. Complex and concentrated and also mega young. Clean and toasty with a wonderful compact quality. So pure. Elegant beyond belief and just floats on the palate. Incredible concentration and density and such youth! Stellar. Surely will improve with air.

Palate has terrific energy. Great lively stinging minerality. A lovely fleeting fruitiness wrapped in minerality. Pear? Great juiciness on the palate. Finish is super juicy and very long. A great wine. A great example of what it is. Bought from Fass Selections.

A mineral and nutty freak show! Wow this palate... Green apple, peach skin, lemon, leesy/yeasty aspects, insane limestone/saline notes on the very long finish, perfect.
24hr Update: Toasty brioche goodness with acidic mineral butter, best to open this one and drink the following day. Crazy? Yes probably, but amazingly enough the bubbles are still almost as good as day one!
