L'Ensamblatge Cava Blend

In retrospect. A tad too sweet. Not as creamy as tasted in past.

Damn this legit. $24? Back the truck up. Happy to stumble across Pera Mata in CA, it has been a while. Generally a more complex offering than previous “tradition” btls tasted

This one much better than the previous 2 that I drank and we're skunked.

Brioche, yeasty beasties, and lemon custard aromas, with a dollop of umami. Crisp, with a very long finish, creamy texture. This is my favorite of the Pere Mata Cavas I've tried so far.

Second tasting in a week. Still off. So much barnyard is not right in a Sparkling Wine. Disappointed...

Tasted off. Almost tasted like a village red burgundy with extreme amounts of barnyard. Will try one of the other bottles to see if it was a one-off...

Serious cava

Pere Mata makes Cava like it's his own private Idaho. Get into it. Or not, more for me... Cuvée no. 2, 2007 vintage.

Nicely aged, Pineapple, lemon, apple, grapefruit pith, toasted nuts.

Cava Gran Reserva DO
Organic, 50% Macabeu, 30% Xarello, 20% Parellada
All three varieties are co-fermented. Primary fermentation is done in oak with some battonage used to develop greater texture. Aged on the lees for over 68 months. Disgorged with zero dosage. Disgorged March 2018.

Sweet on the nose. Bananas foster, white pears. Smooth and light but with some oomph, still back hint of caramel but more melon and cantaloupe and some savory backbone I can’t identify. Good stuff.
