White pepper, grilled herbs, smoky minerals, raspberries and hints of sweet spice define the bouquet of the 2018 PAX Sonoma Hillsides Syrah. It's soft on the palate yet full of energy, displaying zesty red fruits with a citrus twang, as vibrant acids add a mouthwatering yet cheek-puckering sensation, and sweet minerals saturate the senses. The finish is clean and focused on tart fruits, tapering off with spicy florals.

Annual Man Cave dinner. 80+ wines accompanied by zebra, oryx, buffalo, bison and any other African meat you can imagine.

I bought some of these earlier this year but have been holding them. Luckily, someone brought a bottle so that I could check in on them. The nose on this blew me away...reminded me of a Sami-Odi wine in the way it was heavy, without being overbearing. Floral (violets, lavender) but also fruit (ripe, fresh squeezed blackberries) and smoked meat (mainly peppered strip). Love the low ABV (<13%). This is likely best enjoyed over the next 5 years. Have been fortunate enough to have this wine 3 times now. It’s just so good. Iron, blood, pepper, black fruit and a finish that continues on for over a minute. I still think this will improve with a couple of years, but it is truly a special wine now.
