Nose of aged french oak barrel honeycomb beeswax and floral paper whites. Flavors are balanced and smooth with super fine bubbles orange blossom ripe lemon cleansing palate. Actually very vinous and I would have guessed Chardonnay not Pinot Noir. Definitely more old school champagne and would stand up to food pairings 100% Pinot Noir fermented in oak barrels. Vinified and aged 10 months in 228L oak barrels. Dosage 0, Disgorged 5/23.

Drank with Elissa’s egg dish Christmas morning. Very crisp with fine vibrant bubbles. Long lingering finish. Floral, lemon, and honeysuckle (other reviewers notes helped). I think I prefer a little less brightness in my champagne. I need to drink more and consider this.
