Smell is soy/hoisin, sorrel, tarragon, ok its kind of like tuna sushimi - I’m loving the smell, blood red and dark, the taste feels salty and sweet at first, with some prunes but raspberry, leather, burlap, bourbon-y, syrupy but the ending is like meaty warm raspberry with and acidic and very tannic finish that’s balanced
