The 2021 Cervaro della Sala comes to life in the glass with crushed stones, oyster shells and damp earth evolving into lemon oil, green apple and hints of chamomile. This is pure elegance, with silky, verging on creamy textures and brilliant acidity. A salty staining of minerality adds tremendous depth to baked apple and spice notes. It finishes crunchy and long with a citrus tinge as touches of custard and nectarine slowly fade. This is a dramatic Cervaro della Sala that possesses amazing balance. Nosing the 2020 Cervaro della Sala is like waking into a French bakery in the early morning, with notes of lemon oil, butter cream, crusty bread, fresh dough and vanilla bean contrasted by a whiff of crushed oyster shell, which may not be on the menu, but still works perfectly here. This glides effortlessly across the palate with the silkiest of textures, steadily gaining in tension, as mineral-drenched orchard fruits give way to sour melon and, finally, pretty inner florals. The 2020 lingers impossibly long and lightly structured, displaying notes of candied citrus enriched by almond custard. I'd love to toss this blend of 92% Chardonnay and 8% Grechetto into a blind tasting of white Burgundy. Beautifully done. (Eric Guido, Vinous, November 2022)

Tried twice! Chardonnay with up to 10% Grechetto in blend which supercharges the Chard! Pale lemon with aromas of ripe stone and tropical fruits with citrus and floral notes. On the palate flavors of ripe apple, mango and lemon zest with blossom and vanilla spice. Long finish, balanced well with acidity, ending with fruit and floral character. Very Nice!!

A mix of mulled yellow apples, crushed hazelnuts, dusty dried flowers and wet stone creates a rich and inviting display as the 2019 Cervaro della Sala evolves in the glass. It’s soft and enveloping, casting opulent waves of textural ripe orchard fruits and subtle savory spices across the palate. Nuances of wild herbs come together with lingering mineral tones under an air of vanilla custard as the Cervaro della Sala tapers off fresh yet with incredible length. This blend, primarily Chardonnay with a dollop of Grechetto, could use another year or two to fully unwind. (Eric Guido, Vinous, August 2021)

Ooh bah oom ba ba.robust but dainty majorettes holding down the somewhat-oaky doc here. Sooooo bright! Acid keen! Alcohol still potent but this is no...I don’t know the right metaphor. It’s good.
