Too cold for aromas now but palate is killer. Huge acid and utterly classic Chablis. Juicy and lean and so so seashells. Deep with razor sharp focus and lovely length. Killer.

Dec 7th, 2023The nose and the palate on this wine don't line up, but in a good way. Nose is ethereally zesty, with tingly lemon-lime fruit, and some of that slightly brothy limestone minerality of the region. On the palate it's very lean, almost austere, with flavors that show only pure liquefied stones. Near zero fruit. Just stones stones stones until the last bit of the finish fades. Quite distinctive. Although I'm just drinking it to help my cooking along, this seems like it would be a great counterpoint for fresh, sweet sea scallops.
