Sipping Fine Wine

Tried this twice. Pale golden color, complex aging, 34% new French oak-15 months, 30% stainless-4 months; 18% in Foudre for 9 months; rest concrete egg for 14 months. Aromas of stone fruits, oak, nuts, floral and spice. On the palate flavors of peach and pear with honeysuckle, integrated toasty oak and nice citrus tang. Long finish, ending with a wet stone mineral character. Outstanding! Will age well!

Beat both 1er cru burgundies. Sesame soy crackers, ripe white fruit on the nose, bright tasting w kiss of oak and a tingling, structured, good acid finish perfect with food. Curious to try again w 2-3 years of bottle age.

Christmas eve oysters courtesy of an overnite shipment from Hog Island Oysters...shucking by me......yum!

Pop and pour. A delightful pale golden straw color. On the nose: pear, floral, toast, creme brulee. Taste: lemon, honey dew melon, peach, minerals, some toasty oak. Medium to full body, good acidity with a smooth finish.
