The 2021 Proprietary Red Wine Pure Paso® mixes plum sauce and fig with grilled herbs and dusty dried flowers. It's elegant and refined with supple textures and polished black fruits that envelope the palate in youthful concentration. The 2020 Red Wine Pure Paso Proprietary is hauntingly dark and balsamic in the glass. Menthol and Bakers chocolate complement the depths of dried black cherry. It's surprisingly lifted and elegant on the palate, guided by racy acidity. Tart wild berry fruits and exotic spices drench the palate in youthful concentration. This leaves a staining of fine tannins and balsamic tones to linger, finishing structured and with dramatic length. The Pure Paso is a blend of 64% Cabernet Sauvignon, 28% Petite Sirah, 5% Petit Verdot, 2% Malbec and 1% Merlot that matured for eighteen months in a combination of American and French oak. This wine is very dark. It has a nose which connotes darkness as well. Aromas of black cherry lead the way with coffee notes - mocha and espresso - tagging along. The chalkiness which I find to be a hallmark of Paso Cabernet is there, although more subdued than it typically is. On the palate, that chalky atmosphere stops hiding. It is draped over black fruit with a meaty sensibility and a smoky backbeat.

Hedonism. I get this wine, but it is not my style. Huge dark fruits, oak, vanilla, round, almost no acid, but there is some tannin and earl grey tea that keep it from being not good. I am guessing most casual American wine drinkers will find this perfect, and maybe it would be with smoked ribs on the right kind of day.

Sharp berry aroma. Tannic dryness upfront with a plum plum middle. Then a dry dry finish. Good but not a lot of layers.

Ordered at Ferraros when recommended by the sommelier. Did not disappoint and would buy again. Inky, dry, and notes of black cherry complimented the the meal well.
