Finally got myself a bunny, so it was finally time to break this out. Started to pick up those honey, walnut, and oolong secondary flavors that I expect from this at a proper age, but still has plenty of git up. Another five years wouldn't hurt this, as it needed a few hours to open properly. Really showed off the butter-roasted rabbit it washed down.

Quince paste, pomelos, fuyu persimmons, marcona almonds, gardenias, sea breeze. Despite age fresh acidity, light to medium bodied, round oily texture, complex floral, nutty finish with touches of saline. Best served slightly above room temp.
