Vintage 2011 / 75% Xarel-lo 25% Macabeu 7 years sur lattes, extremely vibrant cava with a light weight constitution, which you can also call finesse. First time I drank Illustros. Will not be the last.

Degorgement in 2017. Crisp palat, fresh, almond and wer stone in the bouquet. Very good ending.

1 person found it helpfulFeb 14th, 2018Made with 70% Xarel-lo and 30% Macabeo in the Penedes, this is beautifully expressive, with brioche, butterscotch, and roasted almonds on the nose. Hints of citrus and crushed flowers peek out with time. On the palate the flavors mirror the nose, and a vibrant acidity comes through as well. Mouthfeel is creamy, and finish is long, with brioche and mineral notes lingering on the palate. Aged 95 months on the lees. Paired well with swordfish braised with tomatoes and sweet yellow peppers.

Certainly a pleasure and undoubtedly the finest Spanish sparkler we’ve had the pleasure to drink. Aromas began to show an hour in. Toasted bread, lemon curd, softer mousse, bitterness on the finish. Beautiful work.

This is the best Cava I have ever had, even if it calls itself a Corpinnat. Great yeasty flavors and nose. Nice bubbles. Still, at its high price, there is no comparison with Champagne.
