Distinctly not Champagne, but it's own honest interpretation of extended triage traditional method sparkling. Savory, umami, some toasted sesame notes. Noticeable bitterness in the palate.

Tastes like a good $30 Champagne. At $ 85, not worth it. Clean flavor but no special notes. One of the best Cavas I have had, but confirms my belief that no Cava is worth drinking.
