Feb 19th, 2015I always have a bottle of Sherry in my fridge - vastly under appreciated as a category. It’s prime for my favorite activity - pre-dinner snacking. A good persistent Oloroso alongside toasted hazelnuts (yes must be toasted) and aged Gouda with the crystallized protein crunchies is ethereal.
This is a very good Palo Cortado, like a blurred Amontillado and Oloroso - deep and layered. Crystallized amber. Syrupy caramels, toffee, dried orange, soy, mushroom, and bitter walnuts.
