This is one of the rarest types if sherry a special wine raised by a passionate wine collector on the sherry district
May 2nd, 20142021/1/10-14 as an aperitif and with chorizo, grilled buri, etc. Opens slightly austere and high-toned, and then passes through a mild rancio phase, but after a couple of days reveals some really lovely fruit notes - golden raisin, dried apricot, etc. - as well as almond, hazelnut, golden syrup, etc. Almost like a great Speyside malt (go figure, though oloroso barrels are more typically used there).
