Aug 8th, 20212021/4 with jamon, potato and truffle tortilla, paella, etc. This bottle was on the oxidative side of amontillado- lots of dried stone fruits, cream, and nuts - and very delicious.

Apr 11th, 20212021/1/10-14 as an aperitif and with chorizo, grilled buri, etc. Opens slightly austere and high-toned, and then passes through a mild rancio phase, but after a couple of days reveals some really lovely fruit notes - golden raisin, dried apricot, etc. - as well as almond, hazelnut, golden syrup, etc. Almost like a great Speyside malt (go figure, though oloroso barrels are more typically used there).
