Well, this is amazing. So good! Baked apple, bread dough, lemon curd, hint of caramel, marzipan and amazing acid. Thanks Sunshine and Nate!!

Unfortunately a bad bottle, all I tasted was ginger and it was very sour. 😞

70% Pinot Noir, 30% Chardonnay from old vines from Grand Cru Ambonnay. Malo his blocked. Aged in barrels (25% new). Aged over 8 years on the lees. Tiny dosage of 2g/l. Wow. A treat. A bit smokey with lemon, white flowers and baked apple.

A nice way to start. Nice crisp champagne with slight oxidation, beautiful long finish. Pear, golden apple, and hints of caramel.

En magnum. Slight austerity. Somewhere between the roundness of 2004 and the piercing acidity of 2005
