Doughy yet precise. An evolving wine even over the course of 20 minutes.

The bubbles fall away so quickly turning this to a near still wine after a few brief moments. Seashells, salt, biscuit, bright and clear minerality.

Won't forget this one any time soon. The Idea of pear. The pure essence of all things lovely about the pear. And not simple at all. Loved.

Cheaper option for the Method Champenoise fans like myself. A zero dosage, zero S02 Cremant blend of Chardonnay, Pinot Gris, and Auxerrois. Tight Mousse, intense notes of apples, pears, and pastry.

Clean, and really does evolve over the course of the glass; started off very crisp, red apple, then revealed a toasted marshmallow nose and a little softness. But clean isn't always that exciting, ya know?
