Santorini Assyrtiko

This was an absolute highlight. You get to taste a horizontal of all 7 villages that compose the Santorini PDO bottling. Paris Sigalas also assigns a symbol to each village to represent what characteristics it brings to the wine. The 7 villages are Oia, Imerovigli, Megalochori, Pyrgos, Vourvoulos, Fira, Akrotiri.

Melon, hay, stone fruit. Tart balance.

Sea air and citrus, with more weight on the palate than one might expect. Really refreshing.

Intense tropical fruit, very bright acidity and beautiful minerals. A real treat.
